Spicy Shrimp Guacamole Cucumber Bites

Ingredients
FOR THE SHRIMP mix together and marinate for one hour:
1 tsp paprika
1/2 tsp Southwest seasoning
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp salt
1 lb. peeled and deveined medium shrimp, thawed if frozen, and removed tail.
FOR THE GUACAMOLE mix together:
2 avocados
Juice of 1/2 -1 lemon
1/2 red onion, finely chopped
1 jalapeño, finely chopped
2 tbsp freshly chopped cilantro
1/2 diced tomato
Salt & pepper
Garnish with:
3 tablespoons Sour cream
jalapeño and cilantro
Instructions
Make guacamole.
Slice the cucumber.
Mix all shrimp ingredients and marinate for 20 minutes or more, and then grill in 2 tbsp of oil for 2-3 minutes on each side until shrimp are plump and cooked. DO NOT overcook the shrimp they will taste dry.
Add a spoonful of guacamole and a dollop of sour cream to a slice of cucumber and top with a grilled shrimp.
Garnish it with jalapeño and cilantro, and enjoy
