Spicy Shrimp Guacamole Cucumber Bites

Ingredients


FOR THE SHRIMP mix together and marinate for one hour:

  • 1 tsp paprika

  • 1/2 tsp Southwest seasoning

  • 1/2 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1 lb. peeled and deveined medium shrimp, thawed if frozen, and removed tail.


FOR THE GUACAMOLE mix together:

  • 2 avocados

  • Juice of 1/2 -1 lemon

  • 1/2 red onion, finely chopped

  • 1 jalapeño, finely chopped

  • 2 tbsp freshly chopped cilantro

  • 1/2 diced tomato

  • Salt & pepper


Garnish with:

  • 3 tablespoons Sour cream

  • jalapeño and cilantro

Instructions

  1. Make guacamole.

  2. Slice the cucumber.

  3. Mix all shrimp ingredients and marinate for 20 minutes or more, and then grill in 2 tbsp of oil for 2-3 minutes on each side until shrimp are plump and cooked. DO NOT overcook the shrimp they will taste dry.

  4. Add a spoonful of guacamole and a dollop of sour cream to a slice of cucumber and top with a grilled shrimp.

  5. Garnish it with jalapeño and cilantro, and enjoy
