Honey Orange Salmon

INGREDIENTS
2 pieces Atlantic Salmon portions
2 oranges, juiced
2 garlic cloves, minced
2 tbsp coconut aminos
2 tbsp honey
1/4 tsp ginger
1/2 tsp salt
dash of pepper
1 tbsp arrowroot starch + 2 tbsp water
1 package of jasmine rice
optional: red pepper flakes and fresh herbs for garnish
INSTRUCTIONS
Preheat oven to 400 degrees.
On a baking sheet, place two pieces of salmon. Spray with a little avocado oil, sea salt, and pepper.
Bake for 20 minutes.
Prepare the glaze by combining juiced orange, minced garlic, coconut aminos, ginger, sea salt, and pepper.
Pour into a small pot on medium-low heat.
Combine arrowroot with 2 tbsp water in a small bowl to mix. Add in the pot with glaze and stir.
Continue to stir until sauce thickens **It's important to continue to stir so the glaze won't stick to the bottom.
Once it thickens, remove from heat and pour on top of baked salmon. Reserve some glaze for the finished dish on top of the rice.
