Honey Garlic Chicken Bowl

INGREDIENTS
1.5lb chicken thighs, boneless and skinless
1 tbsp rice vinegar
1 tsp sriracha
3 garlic cloves, minced
1/3 cup honey
1/2 cup soy sauce
1/4 cup ketchup
1/4 tsp sea salt
1 tbsp arrowroot powder (+ 2 tbsp water)
1/2 cup jasmine rice
1/4 cup shredded carrots
1/3 cup edamame
1/4 cup pickled onions
1 tbsp cilantro
1 tbsp green onion
sesame seeds
INSTRUCTIONS
Add chicken thighs to the crockpot.
Mix honey garlic chicken sauce ingredients, leaving out the arrowroot powder. Pour into crockpot.
Let it cook on high for 3-4 hours until the chicken reaches an internal temperature of 165 degrees.
Remove the chicken from the crockpot and turn the heat down to low.
Shred the chicken thighs.
In a small bowl, combine arrowroot powder with water. Mix to combine.
Pour the arrowroot and water mixture into the crockpot. Mix until the sauce thickens.
Add shredded chicken back to the crockpot to mix with sauce.
Assemble bowls with jasmine rice, shredded carrots, edamame, pickled onions, and honey garlic chicken.
Top with cilantro, green onion, and sesame seeds.
