Lemon Blueberry Pancakes

Ingredients

  • 1.5 cups rolled oats (gluten-free if needed)

  • 2 large spotty bananas

  • 2 eggs

  • 1/2 cup milk of choice (may need to adjust the amount slightly depending on the size/ripeness of your bananas)

  • 1 tbsp maple syrup (optional, depending on how sweet you want them)

  • 2 tsp baking powder

  • 1/2 tsp cardamom (optional!)

  • juice + zest from 1 lemon

  • pinch of salt

  • 3 scoops plain collagen (optional: protein boost)

  • 1/2 pint blueberries

Instructions

  1. add all ingredients to a high-speed blender and blend for about a minute until smooth.

  2. preheat a large skillet over medium-high heat. add a bit of butter or oil to the pan.

  3. once hot, scoop out 1/3 cup batter per pancake.

  4. add blueberries to each pancake. let cook for 2-3 minutes on each side or until golden.

  5. serve with anything you’d like and enjoy
