Lemon Blueberry Pancakes

Ingredients
1.5 cups rolled oats (gluten-free if needed)
2 large spotty bananas
2 eggs
1/2 cup milk of choice (may need to adjust the amount slightly depending on the size/ripeness of your bananas)
1 tbsp maple syrup (optional, depending on how sweet you want them)
2 tsp baking powder
1/2 tsp cardamom (optional!)
juice + zest from 1 lemon
pinch of salt
3 scoops plain collagen (optional: protein boost)
1/2 pint blueberries
Instructions
add all ingredients to a high-speed blender and blend for about a minute until smooth.
preheat a large skillet over medium-high heat. add a bit of butter or oil to the pan.
once hot, scoop out 1/3 cup batter per pancake.
add blueberries to each pancake. let cook for 2-3 minutes on each side or until golden.
serve with anything you’d like and enjoy
