Blueberry and Avocado Toast

Ingredients

  • 2 slices of toasted bread

  • Purple cabbage

  • Cider vinegar

  • Cashews

  • Ricotta cheese

  • ½ avocado

  • Lemon juice

  • Blueberries

  • Black pepper


Instructions

  1. Clean the cabbage, cut it into thin slices, and put it into a bowl with a tablespoon of cider vinegar. Let marinate for at least 1 hour.

  2. Clean the avocado, cut it into thin slices, and dress it with some lemon juice. Set aside.

  3. Put the cabbage in the mixer together with the ricotta cheese and a handful of cashews and blend to obtain a cream. 

  4. Spread the cabbage cream on the slices of toasted bread, add the avocado, some blueberries, and a sprinkle of black pepper.
