Black Bean Sweet Potato Cups

Ingredients

  • 1 sweet potato, peeled

  • ¼ cup panko ( can use gluten-free option)

  • 2 tbsp avocado oil

  • 1 tsp garlic powder

  • ½ tsp salt

  • ½ tsp pepper

  • shredded cheddar cheese (or mozzarella)

  • onion, diced

  • bell pepper, diced

  • minced garlic

  • 1 cup black beans

  • ½ cumin

  • ½ chilli powder

  • 1 tbsp adobo sauce

  • veggie broth

  • Optional shot of lime juice

  • Optional parsley

Instructions

  1. Preheat oven to 350˚F.

  2. Use a grater to shred sweet potato.

  3. Add to a large bowl and mix with panko, avocado oil, garlic powder, salt, and pepper.

  4. Spoon into greased muffin tin, filling each tin about ⅔ full.

  5. Bake for 30 minutes or until golden brown.

  6. While that bakes, Cook black beans in veggie broth seasoned with cumin, chili powder salt and pepper adobo sauce, and lime juice

  7. Saute onion and bell pepper and mix with black beans

  8. Once prepared, fill each muffin cup with beans mixture topped with cheese of your choice

  9. Bake for an additional 30 minutes.

  10. Enjoy!
